Congratulations to our first winner of Mylk Fam Iron Chef, Adam Doyle! We are so excited to share Adam's amazing Vegan Potato "Deviled Eggs" recipe on the blog!

Here's a bit about Adam:

Born and raised in Fremont and have been a vegan for 5 years now.

As most are aware when it comes to bringing a dish to a party, office potluck, or holiday event, many non-vegans can be very apprehensive about trying new foods. I try to bring very accessible dishes so that everyone can enjoy them and I don't have to go home with a full tray of leftovers.

This dish was inspired by the go to deviled egg, which was always a staple at most of our family events. It is bite sized, easy for transporting since it doesn't need to be served heated, and open to a variety of toppings. Basically, it's deviled eggs meets potato skins. Enjoy!

INGREDIENTS:

10 small potatoes
Fresh dill
1/2 cup of JUST Mayo (Adam used Best Foods Vegan Mayo)
2 tbsp of Dijon Mustard (Adam used 365 Organic German Mustard)
Annie's Organic Yellow Mustard for the yolky color (Adam used French's Classic Yellow Mustard)
Salt & pepper
Smoked paprika

Optional: Mix in your favorite filling options such as chives, bacon, chopped Italian Dill Pickles, pepperoncinis, pimentos, or anything else you'd like!

PREP TIME

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Cup potatoes length wise, lightly oil, and place onto a baking sheet. Bake for 30 minutes or until fork tender.
  3. When cool, use a spoon to scoop out the middle of the potatoes while leaving some potato left for the structure.
  4. Combine scooped potatoes into a bowl, add mayo, mustard (Adam used mostly German mustard with some yellow mustard for color), and other filling ingredients. Mix well and adjust to taste with salt and pepper.
  5. Fill potatoes with mixture and top with a sprig of dill and a dash of smoked paprika (or other toppings of choice).
  6. Refrigerate to help blend flavors and set.
  7. Enjoy!
